For the Stir Fry:

16 ounzes of kelp noodles, well rinsed and drained

2 cups thinly sliced white mushrooms

2 cup baby spinach, chopped

1 med carrot, julianned

3/4 cup cucumber, chopped

sprouts

3 green onions sliced for garnish

1 tablesoon of white sesame sees for garnish (toasting optional)

 

For the Dressing:

3 tbsp almond butter

juice from one lemon

2 tbsp soya souce

1/2t tbsp ginger, grated

1 clove garlic, derooted

1/4 tsp chille flakes for that extra kick (optional)

1 tbsp water

 

Method:

1. Mix together the stor fry ingredients in a big bowl.

2. Blend together the ingredients for the dressing.

3. Mix together the stir fry ingredients with the dressing in a big bowl.

4. Top with sesame seeds and green onions.

5. Enjoy!
